Quick Fridge Cheesecakes

One of the quickest and easiest cheesecake recipes to prepare. Just a handful of ingredients, with fresh fruit to serve, gives classic cheesecake flavours with convenience.

  • 6 digestive biscuits, crumbed
  • 15ml sugar
  • 30ml melted butter
  • 1 x 379g tin of condensed milk
  • 250g cream cheese
  • 60ml lemon juice

To serve:

  • Red seedless grapes
  • 1 egg white, lightly beaten
  • Caster sugar
  • Blackberries


In a small bowl, mix the biscuit crumbs, sugar and melted butter together. Spoon into Le Creuset Heart-Shaped Mugs. Place the condensed milk and cream cheese into a mixing bowl and beat until smooth with a balloon whisk. Add lemon juice and mix well. Spoon into the mugs and place in the fridge for at least 1 hour or until set.

Brush the grapes with egg white. Dip into caster sugar and make sure all the grapes are covered. Place on a plate and let stand until the sugar has hardened. Decorate the cheesecakes with grapes and blackberries.
