Green Gin and Tonic

Juice your unwanted greens or trimmings to make this delicious drink (you may want to strain any excess pulp.) Try combinations like cucumber, mint, basil and fennel or the tops of sugar snap peas for some sweetness.

  • ¼ cup gin (60ml)
  • ¼ cup juiced greens (60ml)
  • A squeeze of fresh lemon
  • ½ cup tonic (125ml)
  • Herbed ice cubes
  • Pea shoots or celery curls for garnish


To make the herbed ice cubes, freeze wilted herbs in an ice tray with water. Prepare this in advance to allow for freezing time.

Add the gin, juiced greens and a squeeze of lemon into a Le Creuset Burgundy Wine Glass. Add the herbed ice cubes and top up with tonic water. Garnish with pea shoots or celery curls.
