Chicken Wrapped in Parma Ham

Humble chicken thighs and drumsticks reach celebratory heights when wrapped in Parma ham and roasted in the TNS Buffet Casserole with sliced chorizo, tomatoes and a hint of chilli.

  • 4 chicken legs
  • 4 chicken thighs
  • 8 slices Parma ham
  • 100g chorizo, sliced
  • 1 onion, sliced
  • 250g vine tomatoes
  • 1 tin cherry tomatoes
  • 2 red chillies, halved length ways
  • Olive oil


Heat a little olive oil in a TNS buffet casserole, and brown the chicken pieces.

Wrap the chicken pieces in the Parma ham, and set aside.

In the same pan, fry the onion and chorizo until brown. Add the chicken pieces back to the pan, and pour in the tinned tomatoes, vine tomatoes and chillies.

Cover with lid and roast in the oven for 30-40 minutes.

Season well and serve immediately.
