Crab Soup with Parsley Croutons
A rich and intensely flavoured soup with all the taste of the seaside, made from brown and white crab meat, fish stock, shallots, brandy and cream. Serve in individual petite casseroles accompanied by crunchy parsley croutons.
Monkfish, tiger prawns and scallops are threaded onto skewers and grilled, then served with a complementary hollandaise sauce to bring an extra dimension of flavour. This recipe is an ideal appetiser for informal dinner parties.
