Superior Design

The key to the success of the Fish Baker is the stoneware lid, which locks in moisture and conducts heat from the top for uniform cooking. Since seafood has little fat, the enclosed vessel prevents fish from drying out while cooking and steams it to perfection. Little to no oil is needed for most recipes, meaning you can control the health content without sacrificing flavour.

The ridges on the bottom of the dish are another key feature of the Fish Baker. The generously sized interior easily accommodates anything from a pork roast to whole sweet potatoes.  It is the ideal vessel for any dish that requires consistent, even heating in the oven – but will also keep recipes like ceviche cool at the table as well.

 

Here are some of our favourite ways to use the Fish Baker:

  • Appetisers and Salads – Our premium high-fired stoneware will not only retain heat, but also cold as well. This makes it an ideal dish for keeping recipes like ceviche and calamari cool on the table for the entire meal.

  • Steaming Vegetables – A variety of vegetables can be steamed in the Fish Baker, preserving the pure flavour, colour and nutritional value. The elevated ridges keep the veggies off the bottom of the baker so they don’t soak in the steaming liquid.
  • Roasting – Since the Fish Baker is oven-safe up to 260°C, both meats and vegetables can be roasted perfectly in it.  The subtle lift from the ridges keeps the air circulating on all sides, resulting in a crispy, brown exterior.
  • Covered Casseroles – While you can use the Fish Baker for any casserole recipe, it’s a particularly clever way to serve casseroles that incorporate seafood. Seafood gratins, pasta bakes and paellas emerge from the oven bubbly and golden brown. And since it’s broiler-safe, you can crisp up any crunchy toppings at the last minute.

Cooking Fish: Tips from our Kitchen

While the exact ratios and cooking times will vary based on what you are cooking, there is a standard method to using the Fish Baker that will yield perfectly tender, moist fish every time. It’s easy to use with almost foolproof results.

  • Preheat the oven to 180°C.
  • Clean, rinse and pat dry up to two pounds of fish, either whole or filets.
  • Season the fish all over with plenty of salt, pepper and desired seasonings.
  • Arrange herbs or thin citrus slices on the bottom of the baker for extra flavour if desired.
  • Place the fish skin side down in the bottom of the baker.
  • Add vegetables, additional herbs or citrus alongside the fish.
  • Place the embossed lid on the Fish Baker and place it in the preheated oven.
  • Cook the fish covered for 20-30 minutes, until it is firm, opaque and cooked through. The exact cooking time will vary depending on the variety and thickness of the fish.
  • Bring the Fish Baker to the table covered to keep the meal warm, and remove the lid for serving to create a beautiful presentation.
