INGREDIENTS

  • 1 leg of lamb
  • 60ml olive oil
  • 10 shallots, halved
  • 1 head of garlic, broken into cloves
  • 500g Mediterranean potatoes, halved
  • 1 lemon, cut into wedges
  • Rosemary
  • Salt and pepper

 

METHOD

Preheat oven to 200°C.

Place the leg of lamb in a Le Creuset oval casserole and cover with oil. Season well with salt and pepper. Roast for 45 minutes – 1 hour (depending on the size) with the lid on.

Remove the lamb from the oven and add the remaining ingredients to the casserole. Season well and return to the oven, turning the temperature down to 160°C and roast for a further 1 hour- 1 hour 30 minutes (depending on the size of the leg).

Serve hot.
