Bacon, Cheese and Chive Muffins
You will be amazed at how simple these delicious savoury mini muffins are to make. Simply cook the bacon until crisp and then crumble it into the easy batter, together with the grated Cheddar and chives. Spoon the mixture into the mini muffin tin and bake for just 10 to 15 minutes until puffed and golden.
- 6 bacon rashers, cooked till crispy
- 30ml butter
- 60ml chives, snipped
- 2 cups flour
- 30ml sugar
- 10ml baking powder
- 2.5ml salt
- 250ml grated cheddar
- 2 eggs
- 125ml milk
Preheat oven to 180°C.
Fry the bacon until crisp, to be crumbled into the batter.
Melt the butter in the microwave and add the chives, allow to cool.
In a medium bowl whisk together the eggs and milk, then add the butter/chive mixture , cheese and crumbled bacon.
Add the flour, baking powder, salt and sugar and stir until well combined.
Spoon the mixture into the Le Creuset Non Stick Metal Bakeware 12 Cup Mini Muffin tray and bake for 10-15 minutes or until golden and cooked.
Remove from the tin and cool before serving.
