Peach & Burrata Salad

• 4 ripe peaches
• 2 balls burrata
• 2 large handfuls rocket
• 50 g toasted almonds
• Fresh basil or mint
• 2 Tbs olive oil
• 1 Tbs lemon juice
• 1 tsp honey
• Salt and black pepper

Cut the peaches into wedges.

Arrange rocket on a serving platter.

Add the peaches and tear the burrata over the top.

Scatter with toasted almonds and fresh basil or mint.

Whisk together the olive oil, lemon juice and honey.

Season with salt and pepper.

Drizzle over the salad just before serving.
