This simply delicious recipe dresses gently grilled asparagus with a bright lemon-feta dressing for a balanced flavour profile that tastes like spring. It is a delicious side dish with a lighter entree, like roasted salmon or a French-inspired omelette.
Whisk together 1/4 cup oil, lemon juice, honey, Dijon mustard, garlic, lemon zest, and oregano in a small mixing bowl until well-combined. Add the feta cheese and stir to combine. Season to taste with salt and pepper. Set aside.
Toss the asparagus spears with remaining 1 tablespoon olive oil. Season with salt and pepper. Heat a grill pan over medium heat until hot, about 5 minutes. Add the asparagus spears and grill until crisp-tender and slightly charred.
Drizzle the lemon and feta dressing over the grilled asparagus for serving.
