Culinary Inspiration
The irresistible whipped peaks of meringue have always signalled indulgence. The airy treat is practically a visual invitation to celebrate and enjoy. Many stories about the origin of meringue abound, but legend tends to hold that meringue was either created in Switzerland by a small-town pastry maker or invented as a treat for the king of Poland by his pastry chef.
However this magical, cloud-like confection came to be, we do know that, many years later, the renowned French pastry chef Antoine Carême was the first to pipe meringue from a pastry bag, creating beautifully shaped sweets that would eventually fill the shelves of French pâtisseries.
Today, meringue can be baked as stand-alone treats, swirled dramatically to top a pie, folded into cakes for volume, used to build mile-high soufflés or formed into the iconic Australian pavlova.
