Black Garlic Mash with Pan-Seared Steak

• 4 sirloin steaks
• 1 kg potatoes, peeled
• 60 g butter
• 125 ml cream
• 6 cloves confit black garlic
• Salt & pepper
• Olive oil
• Fresh thyme

Boil potatoes until tender. Mash with butter, cream and black garlic. Season.

Pat steaks dry, season well and sear in a hot Le Creuset skillet with a drizzle of oil for 3–4 minutes per side.

Rest steaks for 5 minutes.

Serve over mash with thyme and pan juices.
