INGREDIENTS

  • 250g salted butter, divided into 3 portions and softened
  • Salt and pepper
  • 2 tsp sriracha sauce
  • 2 red chillies, finely chopped
  • 3 garlic cloves, finely crushed
  • 3 tbsp finely chopped chives
  • 1 tsp finely chopped parsley
  • 1 tsp finely chopped rosemary leaves
  • 1 tsp finely chopped thyme

METHOD

Place one portion of the butter in a bowl and beat in the sriracha sauce and chillies; season with salt and pepper. Press into a ramekin, cover with clingfilm and place in the fridge to chill.

Mix the garlic and chives into another portion of butter and season well with salt and pepper. Press into a ramekin, cover with clingfilm and place in the fridge to chill.

Take the last portion of butter and beat in the chopped parsley, rosemary and thyme, season well, press into a ramekin, cover with clingfilm and refrigerate until chilled.
