Sugar-free Date Balls
These delicious date balls are quick to prepare and have no added sugar or dairy. Not only are they great for a get-together with the girls, they also make a healthy lunch box snack or afternoon treat. The ingredients for these sweet treats full of coconut goodness are pantry staples, so they can be whipped up any time of the year! Just remember to store them in the fridge.
- 350g pitted dates, chopped
- 100ml coconut oil
- 100ml plump cranberries
- 100g (1 packet) raw almond flakes
- 15ml cocoa powder
- a generous pinch of sea salt
- 1 large egg
Heat the oil in a saucepan and add the dates. Cook over medium heat while stirring, until the dates become soft (about 5 minutes).
Mix the cranberries, almonds, cocoa powder and sea salt. Add the warm dates and mix to combine. Lightly beat the egg and add slowly to the mixture while stirring continuously. If the mixture is too warm, the egg will scramble – so be careful!
Place teaspoonfuls of the mixture onto a tray. Once the mixture has cooled to the touch, roll into equal-sized balls, decorate with toasted desiccated coconut, cocoa and vermicelli for added interest then place in pretty cupcake papers.
Put the kettle on and enjoy with a steaming cup of tea and good company.
