For the savarin
- 6 eggs
- 240g caster sugar
- 240g plain flour
- 1½ teaspoons baking powder
- 100g granulated sugar
- 100ml water
- 3-4 sprigs of mint leaves
- 500g berries, such as strawberries, raspberries, or blueberries
To make the savarin: Pre-heat the oven to 180°C/160°C fan/Gas Mark 4.
Beat the eggs and gradually add the sugar as the mixture becomes foamy. Sift together the flour and baking powder and carefully fold them into the egg mixture.
Pour the batter into the tin and bake for 25 minutes.
Allow to cool in the tin before turning out.
To finish: Boil the sugar together in the water with the mint. Allow to cool, then strain.
Brush the savarin with the mint syrup, pile the berries in the centre of the cake and garnish with a few mint leaves.
