Root Veg Ribbon Salad

All you need is a vegetable peeler to make this quick and easy summer salad.

For the Salad:

  • 1kg large carrots
  • 2 golden beets
  • ½ fresh pomegranate
  • Handful fresh mint leaves
  • Handful fresh coriander leaves
  • 50g flaked almonds

For the Dressing:

  • 60ml orange juice or half fresh orange
  • 1 tsp wholegrain mustard
  • 1 tbsp honey
  • 1 tbsp olive oil
  • ½ tsp turmeric
  • 1 tsp whole coriander seeds
  • 2 tsp apple cider vinegar


Peel and shave the carrots into ribbons using a peeler.

Thinly slice the golden beets and assemble with the carrots and remaining ingredients.

Mix together the dressing in a cup or jug until well combined and drizzle over salad. Season lightly with sea salt.
