Roast Pork Neck with Apples, Shallots and Potato Wedges

INGREDIENTS

  • 1.5kg rolled pork neck, scored
  • 2 tbsp. vegetable oil
  • salt and pepper to season
  • 2 tbsp. olive oil
  • 4 potatoes, cut into wedges
  • 4 shallots, cut into wedges
  • 4 red apples, cut into wedges

METHOD

Preheat oven to 200˚C.

Place the stainless steel roaster over a high heat on the stove top. Pat the pork dry and rub with seasoning.

When the roaster is extremely hot, add the vegetable oil and brown the pork on all sides.

Place the potatoes, apples and shallots in a bowl with olive oil and seasoning and toss together. When the pork is well browned, add the vegetables to the dish and roast for 45 minutes.

Remove the dish from the oven and set the vegetables aside.

Turn the heat up 240˚C, and return the pork back in and cook for another 20 minutes or until the crackling is crispy.

The roasted apples can be mashed for instant apple sauce.
