INGREDIENTS

  • 250g raspberries
  • 125ml water
  • 2 cups sugar
  • 2 cups lemon juice
  • 2l water, still or sparkling

METHOD

Place the raspberries, 125ml water and sugar in a medium saucepan and bring to the boil stirring continuously until the sugar has melted and the berries have been crushed.

Strain through a sieve, forcing any berries which maybe be caught up in the sieve through it with the back of a spoon.

Allow to cool.

Mix the raspberry mixture with the lemon juice, and top with either still or sparkling water to serve.
