- 2kg large potatoes
- 3 Tbsp. olive oil
- 2 tsp sea salt
- 50g parmesan cheese, finely grated
Preheat the oven to 180°C.
Place the potatoes on a large roasting tray. Rub generously with olive oil and sea salt. Roast in the oven for 1.5 hours, or until golden and cooked through, turning every 20 minutes.
Remove from the oven and cover with parmesan. Place back into the oven for 5 minutes until crispy. Serve immediately.
