- 150ml milk
- Pinch of salt
- 3 tbsp sugar
- 2 – 3 tbsp semolina
- Zest of 1 orange
- 3 eggs
- 1 tbsp finely ground almonds
- Butter for greasing
Preheat the oven to 180°C.
Heat the milk with a pinch of salt and 1 tbsp of sugar.
Add the semolina and continue to heat.
Remove from the stove and add the orange zest.
Pour the mixture into a bowl at leave to cool down.
Butter the ramekins and dust with some sugar. Place these in the fridge.
Once the mixture has cooled, mix the egg yolks then the finely ground almonds.
Whisk the egg whites adding the rest of the sugar.
Gently fold the egg whites into the mixture.
Pour the mixture into the ramekins being careful not to fill these too high.
Place the ramekins in a bain-marie and leave to bake in the oven for 20 to 25 minutes.
