INGREDIENTS

  • 180g butter
  • 180g castor sugar
  • 10ml grated orange zest
  • 3 extra large eggs, beaten
  • 120g cake flour
  • 120g self-raising flour
  • 80ml orange juice
  • orange rind to garnish
  • a pinch of salt

METHOD

Preheat the oven to 180°C.

Cream the butter and the sugar until light and fluffy, then beat in the orange zest.

Gradually beat in the eggs.

Sift the flours together with the salt, and fold into the batter mixture alternating with the orange juice until well blended.

Pour into a bunt tin and bake for 25-30 minutes or until golden and cooked through. Remove from the oven and allow to cool.

Dust with icing sugar and top with orange rind. Serve on a Le Creuset Cake Stand.
