Mini Bacon and Blue Cheese Quiches

  • 180g flour
  • 1ml salt
  • 100ml icing sugar
  • 100g butter
  • 5ml water


  • 250g streaky bacon, chopped
  • 100g blue cheese
  • 4 eggs
  • 125ml milk
  • salt and pepper to taste


Preheat the oven to 180°C.

Sift the flour and salt together. Rub in the butter and add the water. Bring together to form a dough, cover and place in fridge for at least 30 minutes.

Roll the pastry out thinly and line 4 Le Creuset Mini Fluted Flan dishes. Chill in the fridge for a further 30 minutes.

Roll off excess pastry with a rolling pin, cover with baking paper and fill with baking beans or rice. Bake at 180°c for 15 minutes. Remove the beans and cook for a further 5 minutes.

In the meantime, sauté the bacon until crispy.

Fill the baked pastry cases with bacon and crumbled blue cheese.

Beat the eggs and milk together and season with salt and pepper.

Place the flan dishes on a Le Creuset Non-Stick Metal Baking sheet, and pour in the egg mixture. Bake for 15-20 minutes, until the egg has set.

Remove from oven and serve hot or cold.
