Mediterranean Platter

Lay out an impressive spread of delicious Mediterranean fare for guests.  This antipasti platter contains typically Mediterranean specialities such as Manchego cheese drenched in green olive oil (as served in Spain), fresh figs, asparagus, artichokes, ham, olives, and rustic floury bread.

  • 8 fresh figs, halved
  • 50g capers
  • 100g Serrano ham
  • 100g Spanish salami
  • 100g chorizo, thinly sliced
  • 300g Manchego cheese
  • 1 baguette, sliced and toasted

For the asparagus

  • 30g butter
  • 100ml olive oil
  • 200g asparagus
  • Salt to taste

For the olives

  • 250g green olives
  • 2 sprigs rosemary
  • Pinch of chilli flakes

For the artichokes

  • 1 tin of artichoke hearts, drained
  • 80ml olive oil
  • Pinch of chilli flakes
  • Salt to taste
  • Lemon juice to taste


Heat the butter and olive oil together in a pan over high heat. Sear the asparagus for 3 – 5 minutes, so that they are slightly golden and still crunchy.

Place the olives, rosemary and chilli flakes in a bowl and set aside to infuse slightly.

Quickly make the artichokes by placing a pan on high heat and gently tossing them to create a little bit of colour. Drizzle with the olive oil and season with chilli flakes, salt and lemon juice.

Make a cross on the top of the fig and squeeze gently to reveal some of the flesh. Arrange these and all the other ingredients on the platter, except for the Manchego cheese. Place the cheese in the centre of the platter and add the warm, toasted bread.
