Indian Chicken Skewers

INGREDIENTS

Marinade:

  • ½ onion grated
  • 3 cloves garlic crushed
  • 1 tablespoon (15ml) fresh grated ginger
  • 2 teaspoons (10ml) ground cumin
  • 2 teaspoons (10ml) ground coriander
  • ½ teaspoon (5ml) turmeric
  • ¼ cup (60ml) plain yoghurt
  • 4 chicken breast fillets, sliced into strips
  • Salt and milled pepper
  • Handful of curry leaves
  • Red onion finely sliced

For raita:

  • 1 cup (250ml) plain yoghurt
  • 3 cardamom pods, husks removed
  • ½ cup (125ml) grated cucumber
  • Salt and milled pepper

METHOD

Combine all marinate ingredients together. Toss through the chicken and allow to marinate for at least 30 minutes.

Thread the marinated chicken onto skewers.

Sear the chicken on a hot griddle pan for 3-5 minutes per side until cooked through

Fry curry leaves until crispy. Mix together raita ingredients.

Garnish skewers with onion and curry leaves. Serve with raita, rootis or naan breads.
