Grilled Vegetables with Sweet Spices
- 1 smooth and firm eggplant
- 2 small courgettes
- 2 red onions
- 1 tub of plain yoghurt
- Juice of 1/2 lime
- 1 Tbsp. Tandoori spices
Cut the vegetables into slices of about 1cm thick.
Mix the yoghurt, lime juice and spices together. Lightly brush the vegetables with this marinade.
On a medium heat, grill the vegetable slices on each side. Serve warm.
