Grilled Vegetables with Sweet Spices

These spicy grilled vegetables make a terrific side dish for chicken or fish. The Tandoori spices are mild, but add an aromatic and distinctive flavour.

INGREDIENTS

  • 1 smooth and firm eggplant
  • 2 small courgettes
  • 2 red onions
  • 1 tub of plain yoghurt
  • Juice of 1/2 lime
  • 1 Tbsp. Tandoori spices

METHOD

Cut the vegetables into slices of about 1cm thick.

Mix the yoghurt, lime juice and spices together. Lightly brush the vegetables with this marinade.

On a medium heat, grill the vegetable slices on each side. Serve warm.
