- 6 tbsp olive oil
- 3 tbsp balsamic vinegar
- 4 tbsp liquid honey (e.g. lavender honey)
- freshly ground pepper
- 12 fresh figs
- 6 slices of bread
- a few sprigs of mint
Mix the oil, vinegar and 2 tablespoons of honey in a bowl until combined. Season to taste with freshly ground pepper.
Halve the figs and place them cut side down in the dressing. Marinate for 10 minutes, basting occasionally with the dressing.
Heat the grill pan and butter the slices of bread. Cook until crisp and golden brown. Remove from the grill and cook the figs for 3 minutes, turning occasionally. Serve the warm figs on the grilled bread. Drizzle with some of the remaining dressing and honey, and garnish with finely chopped mint. Also delicious with sour cream.
