Delicious Apple Cake
- 150g soft butter
- 100g caster sugar
- 2 teaspoons vanilla extract
- 3 eggs separated
- 250g almond flour
- 2 tablespoons chopped cranberries
- 2 tablespoons chopped dates
- 2 tablespoons late harvest wine
- 3 green apples peeled, cored and thinly sliced
- 2 tablespoons sugar
- Icing sugar for dusting
Heat the oven to 170°C. Butter a Le Creuset 26cm Signature Buffet Casserole.
Soak chopped cranberries and dates in the wine for about 20 minutes.
Beat soft butter and caster sugar until creamy. Add vanilla and egg yolks one at a time.
Add almond flour and baking powder to the butter mixture and mix well. Fold in soaked cranberries and dates.
Beat egg whites until they form soft peaks and carefully fold into the mixture. Scrape mixture into the buffet casserole and level the surface.
Starting from the centre, push the sliced apples halfway into the batter in a circular form.
Scatter sugar evenly over the apples and bake for 45 minutes.
Cover the casserole with tinfoil and bake for another 15 minutes.
Let the cake cool in the casserole before dusting lightly with the icing sugar.
