- 2 litres water
- 200g castor sugar
- Juice of 3 lemons
- 1 large handful of fresh mint
- 1 cucumber, sliced
- 1 lemon, sliced
In a large pot, bring 400ml of the water and the sugar to a gentle simmer, stirring until the sugar dissolves. Remove from the heat.
Add the rest of the water, the lemon juice and half of the mint.
Allow to chill in the fridge. Strain the lemonade, and then add the cucumber and lemon slices and the remaining mint. Allow to infuse for a further 30 minutes before serving.
To serve pour into tall glasses over ice.
