Crispy Potatoes with Chorizo and Garlic
- 1 chorizo sausage, cubed
- 1kg potatoes, diced into approximately 1.5cm sized cubes
- 6 garlic cloves, thinly sliced
- olive oil, for frying
- lemon juice, for serving
- salt & pepper, to taste
- handful fresh parsley, chopped, to serve
Fry the chorizo in a large, hot frying pan in a splash of olive oil until golden brown and crisp.
Remove from the pan and set aside.
Add the potatoes and cook until crisp, golden and cooked through, approximately 15 minutes.
Add the garlic and chorizo back to the pan and cook for another minute.
Season to taste and add a squeeze of lemon juice then add the parsley.
Serve immediately with extra lemon wedges.
