Cranberry Walnut Bread

  • 375ml sugar
  • 160ml walnuts, chopped finely
  • 2 tsp cinnamon
  • 560ml flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 egg, beaten lightly
  • 250ml milk
  • 80ml vegetable oil
  • 250ml cranberries, chopped
  • 2 tbsp butter, melted


Preheat the oven to 180°C, grease and flour a Le Creuset 20cm Signature Round Casserole. Mix 1/2 cups sugar, walnuts and cinnamon in a bowl. In a large mixing bowl, stir together 250ml sugar, 500ml flour, baking powder and salt.

Mix the egg, milk, and oil in a separate bowl. Combine the egg and flour mixtures, stir in the cranberries. Pour half the batter into the casserole. Top with half the walnut mixture, then the remaining batter.

Mix the remaining walnut mixture with the butter and 1/4 cup flour. Stir. Use to top the batter. Bake for 60-65 minutes. Cool, then remove from the casserole.
