INGREDIENTS

  • 250g plain flour
  • 180g butter, softened
  • 80g caster sugar
  • Pinch of salt
  • 50g egg white (approximately 1½ egg whites)
  • 50g goji berries (available in health food shops and larger supermarkets)
  • 50g dark chocolate chips

METHOD

Pre-heat the oven to 180°C/160°C fan/Gas Mark 4.

Mix together the flour, butter, sugar and salt. Beat the egg white and add to the dry mixture and knead until smooth.

Add the goji berries and the chocolate chips. Roll the dough into a sausage shape and wrap in cling film. Leave in the refrigerator to firm up for at least 2 hours.

Cut the dough into slices and arrange on the baking sheet. Bake for 20 minutes or until golden brown.
