Choc-chip Peanut Butter Muffins
- 1 egg
- ¼ cup oil
- ½ cup sugar
- 2 tsp vanilla
- 1 cup greek yoghurt
- ½ cup peanut butter
- ½ tsp bicarbonate of soda
- ¾ cup flour
- ½ tsp vinegar
- ½ cup chocolate chips
Preheat oven to 180ºC and line a muffin pan with cupcake liners.
Cream the egg, oil and sugar together until light and fluffy. Add the vanilla, yoghurt, vinegar, peanut butter and mix well.
Once combined, sift in the flour, bicarbonate of soda and baking powder and mix until well incorporated.
Stir in the chocolate chips.
Scoop the batter into the lined muffins tins, filling them ¾ full.
Bake for 15-20 minutes or until golden brown.
Allow to cool, and enjoy.
