- 1 small zucchini
- 1 ½ tbsp chilli oil
- 1 small lemon
- 1 tsp oregano
- 1 ciabatta
- olive oil
- 6 anchovies or sprat
Preheat the grill pan at the highest level.
Slice the ciabatta and brush with olive oil. Place on the grill and cook until golden brown.
Cut the zucchini lengthwise into thin slices, brush with the chilli oil and lemon juice and sprinkle with oregano and salt. Place on the grill and cook on both sides. Remove and set aside.
Rub the anchovies with olive oil and cook on both sides.
Garnish the bruschetta with the grilled zucchini and anchovy. Sprinkle with more lemon juice and oregano.
