INGREDIENTS

  • 25g cake flour
  • ¼ t salt
  • 100g ground almonds
  • 140g caster sugar
  • 3 eggs plus 3 yolks
  • 250ml double-thick cream
  • 250g blueberries, plus extra to serve
  • sifted icing sugar, to dust

METHOD

Preheat oven to 180˚C.

Mix together the flour, salt and ground almonds. Add the caster sugar, whole eggs, yolks and cream. Beat until smooth. Stir half the blueberries through the batter.

Pour into mini fluted flan dishes, scatter over the remaining berries and bake for 18–20 minutes or until risen and a metal skewer inserted in the middle comes out clean. Dust with icing sugar and serve warm with extra berries.
