Seafood Potjie

Serves 6

Ingredients:
500g Kingklip steaks, cut into cubes
250g baby calamari
500g prawns
300g black mussels
2-3 crayfish, halved and heads rinsed
1 onion, diced
2 garlic cloves, diced
1/2 cup white wine
1 x 400g chopped tomatoes
1 cup cream
Plenty of fresh flat leaf parsley, chopped
Salt and pepper

Fry the onion and garlic in a good slug of olive oil until soft. Add the wine and allow to reduce by half before adding the tinned tomatoes. Add the kingklip cubes, halved crayfish and prawns then cook for 3 minutes, add the mussels and baby calamari and cook until the mussels have opened. Pour over the cream and chopped parsley and stir to combine.

Serve with plenty of crusty bread and chilled white wine.
