Prawn Stir - Fry

Serves 4-6

INGREDIENTS

1 red chili, chopped
800g large prawns, shelled and deveined.
2 red peppers, sliced into thin wedges
2 green peppers, sliced into thin wedges
½ packet courgettes sliced into slivers
2 red onions cut into wedges
1 bunch asparagus, woody stalks removed.
Salt and milled pepper Oyster sauce to serve


METHOD

Heat oil in a wok until hot.
Toss in garlic, ginger and chilli and cook for 20 seconds.
Toss in remaining ingredients and stirfry, tossing, until prawns are cooked through. Season.
Add oyster sauce and toss to coat all vegetables.

Serve with steamed rice or noodles
