Pasta Puttanesca

Serves 4-6

Ingredients:
3/4 packet Penne pasta
2 tins whole tomatoes
4-6 garlic cloves, sliced
6-8 anchovy fillets
Black olives
Large bunch flat leaf parsley
Salt and pepper
Good olive oil

Cook the pasta according to the directions on the packet. Heat a good slug of best olive oil in a large pan then add the garlic and anchovies and fry for a second before adding the tinned tomatoes. Crush the tomatoes into chunky bits, add the olives, and allow the sauce to reduce for a few minutes. Once the sauce has thickened add the freshly chopped parsley and toss through the hot pasta.

Serve with an extra drizzle of olive oil and parmesan.
