Caramelized onion and tomato chutney

Delicious served with boerewors and fresh bread rolls!

Ingredients:
3 red onions, sliced
2 garlic cloves, chopped
4 cm ginger, chopped
1 chilli, chopped (optional)
2 x 400g tins chopped tomatoes
1/2 cup red wine vinegar
1 cup treacle sugar
Salt and pepper to taste
Olive oil for frying

Fry the onions in a little oil over low heat until they are soft and caramelized and brown. Add the garlic, ginger and chilli and fry for another minute. Add the remaining ingredients and simmer for 25 minutes until most of the liquid has evaporated and the mixture has become thick and sticky.

Serve hot or cold. Can be stored in sterilized jars for up to a month.
