Berry Clafouti

Serves 4-6

INGREDIENTS

1/3 cup (85ml) granulated sugar
1 tsp (5ml) salt
2/3 cup (180ml) cake flour, sifted
1 cup (250ml) cream
3 eggs
1 Tbsp (30ml) vanilla extract
2 cups (500ml) mixed berries (fresh or frozen)

METHOD

Preheat oven to 180˚C.
Mix all ingredients (except berries) together to form a smooth batter
Pour batter into  a greased Le Creuset baker and scatter over berries.
Bake for 50-60 minutes until puffed and golden and a needle or knife plunged in the centre comes out clean (It will sink slightly as it cools).
Dust with icing sugar before serving.
